One time my dad saw a bunch of banana leftovers from the other day, so being the dad that he always is, he hates wasting food. He'd start preaching us how hard it is to earn money and to buy food that are being prepared by him and mom, so instead of hearing all these "complains", I figured why not make a banana cake, you'll never know that they are left overs plus they are healthy too coz, they really don't need a lot of sugar since starch and the natural sweetness of the over ripened bananas should be enough. So I want to share my own recipe, it's very easy and very quick;
Prep Time : 10 Minutes
To Cook : 30 Minutes
Servings : 10 Servings
INGREDIENTS :
3 cups flour
1 1/2 tsp baking powder
3 tsp baking soda
1 1/2 cups sugar
150g butter, melted or vegetable oil
3 egg, lightly beaten
2 teaspoon vanilla essence
3/4 cup (60ml) milk
1 1/2 cup mashed banana
1 sachet of Quaker Oats in Honey and Banana (Optional)
Directions:
1. Mix all the dry ingredients in a mixing bowl ; flour, baking powder, baking soda, sugar and quaker oats.
2. Add the wet ingredients in the dry ingredients; eggs, milk, bananas and oil. Mix them well all together and make sure that there are no lumps. It is best to pureè the bananas on a blender to have a smooth mixture. But if you're a fan of slight lumps of bananas in your cake that's ok.
3. After mixing, pour the mixture in a baking pan. Make sure to put a parchment paper and grease the pan or a bond paper will do. Make sure you pour it evenly.
4.Bake for 30-35 minutes or until a skewer inserted into centre comes out clean. Set aside in pan for 10 minutes to cool slightly. Serve warm or transfer to wire rack to cool completely.

ENJOY!
